Be sure to give these guys and gals a pat on the back the next time you see them, as well as the rest of the people who participated for the 8 weeks of our paleo challenge. It is apparent that those who really tried to put an effort into make some adjustments to their nutrition and lifestyle found a result that they were looking for. I think the majority will support the notion that they now feel better about themselves at this time than they did 8 weeks ago before the challenge was started. The hardest part of change is over. You have established a blueprint for success, now all you need to do is stay on the right path. The staff will be more than happy to assist you in any way in the future in order to keep you heading in the right direction, all you need to do is ask!

Paleo Challenge Finale Update

Great job by everyone who participated in the Paleo Challenge. There were a lot of smiling faces this weekend as a lot of people realized how much progress they made over the last 8 weeks. Please be patient while waiting for the final results. It will take a few days to organize and grade all of the before and after photos as well as finish scoring all of the food journals that were turned in over the weekend. We should have the results announced by the middle of the week. In the next week or so we will a hold a “where to go from here session” for those of you who are interested in life after the Paleo Challenge nutrition. At that time we will also answer any questions as well as entertain any suggestions for the next time. We will also have a quick survey to fill out for anyone who wishes to give us feedback. Hamburger with Cherry Salsa

Hamburger with Cherry Salsa
Prep Time: 20 minutes
Cook Time: 8-12 minutes depending on how you like your burger cooked

Ingredients:
2 8 to 10 ounce burgers
1/2 cup chopped dried cherries (available at Trader Joe’s)
1/2 cup bottled chili sauce**
3 tablespoons chopped green onions
2 tablespoons chopped fresh cilantro
2 tables spoons of your favorite vinagrette (I used mango, but balsamic, raspberry or white wine would work)
zest of 1 medium sized orange
1 medium orange, peeled, seeded and chopped into small pieces

**If you can’t find good quality chili sauce, you can substitute the following:
1/2 cup tomato sauce
1 tsp chili powder
1/2 tsp cinnamon
1/2 tsp pepper

Directions:
Combine all ingredients in a bowl, except for the burgers. For best result, refrigerate for 30 minutes before serving. Prepare burgers to desired taste. Top with salsa.
Makes enough for 3-4 burgers. Will also work on chicken and white fish.
